A Process of Bikla Production
No matter how simple it looks to make bikla, it is necessary to know the exact ratio of wine and milk and, of course, the mixing method - always with a wooden spoon. Otherwise, you will not get a compact, thick liquid of light purple color with sweet aromas that please taste buds. Instead, it is similar to yogurt but has a thinner consistency and a slightly sour taste.
Where Can You Taste Bikla?
Traditionally, bikla is made in the Vrgorac region after the grape harvest. Apart from Vrgorac, a similar drink exists around Mosor and Biokovo and on the islands of Brač, Hvar, and Korčula. The cyclamen-colored drink had an essential place in the eating habits of the southern Dalmatian islands and the Dalmatian Zagora, especially in difficult living conditions.
According to legend, bikla was brought to Zagora from the islands of Hvar and Brač, which were Greek colonies, and according to culinary research, it was drunk by the ancient Greeks before the attack on Troy.
