Discover Tinjan, Istria: Home to the Finest Croatian Meat Delicacy

Istrian prosciutto (Croatian: pršut) is one of the most famous delicacies in Istrian cuisine. Popularly called the Istrian Violin, it is a prestigious cured meat delicacy made in a strictly traditional way, which gives it a unique aroma, taste, and texture. It is cut in long, fine incisions, like playing the violin. Pršut has a royal status in Croatian gastronomy and is an integral part of the Istrian culture, so much it even has its Municipality! A historic town in central Istria called Tinjan proudly carries the Municipality of Istrian prosciutto title. It is also home to the renowned International Prosciutto Fair - ISAP. 

Nurturing the Prosciutto Traditions of Istria and the Mediterranean

Istrian pršut is a unique kind of prosciutto due to a particular way of production. Firstly, it is made without the hide and the underlying fatty issue, as well as without the leg. Furthermore, as opposed to the neighboring prosciutto regions, the pelvic bone is not removed from the prosciutto, thus giving it a specific asymmetrical shape. Finally, unlike the customs in Dalmatia or Herzegovinia, Istrian prosciutto is not smoke-cured. Instead, it contains a unique spice blend, including salt and pepper, and sometimes rosemary, bay leaf, or similar natural spices.

The International Prosciutto Fair was first held in 2006 and has since remained one of the biggest events dedicated to prosciutto in this part of Europe. This year will mark its 14th edition and gather producers from not only several Croatian regions but also from Italy, Slovenia, Austria, Spain, Portugal, and many more! It is a one-of-a-kind opportunity for visitors to try the great variety of exquisite prosciutto.

Among the most exciting parts of the fair is the so-called prosciutto championship - the official tasting and competition to determine the prosciutto of the best taste and quality. Traditionally, prosciutto producers at the fair compete in several different categories, including the following: the best Istrian prosciutto bearing the European Protected Designation of Origin (PDO), followed by Krk, Dalmatian, and Drniš prosciutto bearing the European Protected Geographical Indication (PGI). Next to these and many other categories, the prosciutto that earns the highest scores by the expert jury will receive the ultimate ISAP champion title, which is the most prestigious recognition for the quality of prosciutto in Croatia and other participating countries. 

‍Enjoy the Treasury of Authentic Istrian Cuisine and More

Next to the fair, visitors can also head to the town center for guided tastings at the House of Istrian Prosciutto, where they can taste and buy the awarded prosciuttos. They can also enjoy a glass of exquisite wine from Tinjan or central Istria and explore a wide variety of authentic Istrian delicacies.

The International Prosciutto Fair will take place from the 14th to the 16th of October, 2022. It’s an event no gourmet should miss, but it also offers many more delights outside the main event. There is something for everyone - when you’re not tasting prosciutto, you can enjoy the concerts, workshops, and various sports events during those three days.
