In a small Istrian village called Cerjani, nono Eufemio, more widely known as zio Nuccio, dedicated his life to producing Istrian wine and grappa. His legacy still lives on to this day. His grandson Goran Špehar has kept the traditional know-how alive by founding Istarska kapljica (Istrian Drop), a modern distillery inspired by tradition, devoted to producing high-quality spirits.
"Water of Life" Distilled from the Finest Grape Varieties
Istrian grappa is one of the most widely popular spirits in Istria and also one with the longest tradition. It is a spirit of Italian origin made by the distillation of grape marc (or pomace), a by-product of making wine. Opposite to that, and less common in Istria, is acquavite (or acquavite d'uva), which is made by distilling whole fermented grapes. This type of grape brandy Croatians calls lozovača, a flavorful spirit with abundant grape aromas.
The story says that nono Eufemio used to make both kinds of spirits, but while he would sell grappa to others, he would always keep the precious acquavite d'uva for himself and his family to enjoy. Today, the Istrian Drop distillery is devoted to the production of acquavite. With the addition of traditional herbs, fruits, and spices, such as blueberries, walnuts, truffles, and other naturally-sourced ingredients, it has built a variety of high-quality spirits and liqueurs over the years. A truly unique approach to production has brought the distillery an impressive array of awards.
