It all began over a hundred years ago when Mateo Kovač, the great-great-grandfather of Karlo Grebac, planted the first olives in these fertile soils. Since then, through five generations, the Kovač and Grebac families have tended to these ancient trees, nurturing them with care and reverence. Today, under the stewardship of Karlo Grebac and his father Fiorentino, the olive grove has flourished, boasting a diverse array of olive varieties, each lending its unique flavor profile to the exquisite oils produced here. From the delicate notes of Grebac buža, perfect for pairing with fresh seafood and risottos, to the robust intensity of bianchera, ideal for drizzling over grilled meats and hearty stews, every drop of oil tells a story of tradition, craftsmanship, and the bountiful land of Istria.
